Sweet Potatoes- This is the “darling of the south” when it comes to food, and a staple among folks from the country. At least that is what I have been led to believe for all of my life. Sweet potatoeswere prepared in many different ways at “Granny’s House”.Every holiday there were the candied ones, on other occassions there were thebaked ones, and the other day we went to a resturaunt and got some “Sweet ‘tater French Fries”. The fried ones are probably not as good for us as the baked, so I stayed away from those.
The more color a veggie has the better, and sweet potatoes are full of carotenoids (potent antioxidents). The carotenoids protect the sweet potato from the sun, predators (who don’t like the taste), and at the same time help our heart.
So ,the next time you want a baked potato…try a sweet potato.
